The Detroit Free Press has an excellent article today regarding the rise in children who eat a vegan diet.
“If I knew you couldn’t be healthy and vegan, then no, I wouldn’t be doing it,” says the stay-at-home mom, who’s passionate about animal rights and became a vegan 15 years ago. “For Tyler and Will and Maya, it’s never been this torturous thing or even close. It’s just that eating animals doesn’t make sense to them.”

Some dinners this week….Friday night pizza, salad porn, spinach lasagna. BAM!
Dinner: raw taco salad (crumbled pine nut cheddah on top..see below).
Dehydrator experiment gone well: I took some of the leftover pine nut cheddah I made (below)…spread it out on my Paraflexx sheet with an offset spatula, and dehydrated at 100 degrees for a day and a half. Result was a really delicious, raw, vegan, cheddar-style, cheeze slice; good for sunburgers, or crumbling on salads (see above). Yum.
Dinner: back to raw…..sun burger and marinated broccoli both slathered in pine nut cheddah sauce.
Christmas Dinner 2012: started with an app of spicy-sweet neatballs with pineapple, followed by seitan roast stuffed with shiitakes and leeks, smothered in crimini mushroom gravy, roasted veggies, corn, rolls, Not pictured: apple crisp for dessert.

Last year I made vegan candy as gifts, and subsequently got everyone addicted! Candy making is now an annual event….above is veganized Aunt Bill’s Brown Candy.
Dinner: stuffed shrooms, spinach/shiitake/sesame salad (say that five times fast!)
Still cold. Dinner: homemade chili.
