In the dehydrator today: raw marinated eggplant, that will be my “facon” in a raw BLT sandwich. I can’t tell you how excited I am to eat these. VERY.
Marinade: 2 T of maple syrup, 2 T Braggs Aminos, 2 T apple cider vinegar, 1 t chili powder, few dashes each of paprika and cumin. I also threw in a bit of smoked paprika.
Method: peel and cut your eggplant into long strips, place in a ziploc bag with the marinade and let it marinade for about 2 hours. Dehydrate at 105° for 12 hours, flipping the pieces at the halfway mark.
